Ricotta cheese I made today. I used it in manicotti. I combined 2 2/3 cups milk, 1 TBS. plain vinegar, and a tiny amount of salt and heated it to 185degrees. Then poured it into a towel for about 20 minutes. I let it drain and squeezed it some. It really worked!
